It has been raining since Friday. Record amounts of precipitation even. No sign of it letting up for the next couple of days. I find it really saps my energy. Blah.
Yesterday we went out in the afternoon because Cory needed to shop for jeans & t-shirts. Then we hit up Costco. By the time we got home neither one of us felt like doing much in the way of cooking, so we ended up just having a salad and heating up some flautas that we got at Costco.
So today I thought we would have the chicken and tofu stir fry that I had planned for yesterday. I was thinking just a quick stir fry with rice, but Cory was in the mood to experiment.
We ended up with a Thai feast.
Green Curry with Chicken.
Green is my favorite of the Thai Curries (Matsaman being a close second). This was different that our usual Green Curry, but very tasty and the chicken was cooked perfectly.
Tofu and Mushrooms.
Except I didn’t eat the mushrooms because mushrooms are yucky. Unfortunately, I can’t seem to convince Cory of that fact. The tofu was excellent though. Lately Costco has had 3-packs of tofu for $0.97 which is fantastic if you like tofu. We do!
Broccoli with Oyster Sauce.
Very simple stir fry dish, but flavorful.
I polished off the broccoli, but I will be having leftover Curry Chicken & Tofu for lunch tomorrow.
Dinner took a little longer than expected, but Cory & I have fun playing in the kitchen and the results were excellent. And really, considering the fact that we made 3 dishes (plus rice), the cooking time was not that long. It was the time spent choosing the recipes and getting organized that made it seem longer. Oh, and the cleaning up.
Not something I would want to do every week night, but it was a good way to liven up a rainy evening.
